Tam leads the culinary charge for VIVA injecting his restaurant expertise into all aspects of our portfolio. His experience is synonymous with culinary innovation, quality food and entrepreneurial spirit. Tam is responsible for menu creation and implementation.
He has also shown complete commitment to developing the skills of other up-and-coming young chefs. Tam can often be found visiting the markets and suppliers with his team where he sources the very best possible ingredients in order to continually develop his style of food and maintain the very high standards that he sets.
Tam joined VIVA in 2012. Prior to joining VIVA, Tam was the Executive Chef at Vinpearl Resort in Da Nang. He is a graduate of the Saigon Tourist Hospitality School.
